    <description>&lt;P&gt;I currently have a kitchen designed to operate in a "mirrored" manner... meaning the tickets coming from the FOH should "split" 50/50 between my "North side" and my "South side" kitchens. During slower times or times with less cooks, I route to just one side of the kitchen.&amp;nbsp; Does anyone know of a way that has worked for them to make this setup work?&amp;nbsp;&lt;/P&gt;&lt;P&gt;Currently I have half my devices sending to one and half to the other side. Take-outs and Online Ordering to one side and Door Dash to the other just to try to even it out a bit. The problem with this configuration is that it is incapable of auto-leveling at all. Sometimes one side gets hammered with orders while the other side gets a chance to re-stock. Toast did not have the capability of this when I purchased my new building so I had to make due with what configurations I could muster up.&amp;nbsp;&lt;/P&gt;&lt;P&gt;If anyone else has this same kitchen design or layout, your opinions and ideas would be greatly appreciated.
