topic Chargebacks in Restaurant Operations

good morning I have recently had quite a few chargebacks within my three restaurants. All have been a customer in the house paying with their chipped card on a handheld and have signed on the handheld. My question is if I have a digital signature and in some cases even an image of their signature is that a valid response against a chargeback? I currently have all servers having to get a physical signature and not using the hand held to cash people out and they are not happy.
