Is there a way to set up so that, when orders are being entered into the register, they show up live on the expediter screen?

You can use preview tickets with the new grid view KDS mode, but depending on your setup you may not be able to use grid view because it does not support all of classic KDS features.

Is this a menu option that could be disabled for my user level? I've looked and can't find a 'Kitchen' menu option. Thank you.

This option is accessible on Toast Web that requires manager/owner level. Try clicking on this link: https://www.toasttab.com/restaurants/admin/kitchen/setup
If you don't have permission to access the page, you will need to ask someone else who have the permission.
