Missing Check Numbers

Going thru a sales tax audit and am getting puahback because of missing check numbers. I believe when all items are voided on a check, the ticket number simply disappears, but can't find an article saying that. Anyone know the answer?

with a pos system i think the order number should show up even if it is voided my problem is any given day I am missing 17-24 ticket numbers and we might void 1 order a week. it makes absolutely no sense to me and toast has pretty much not given a clear explanation very frustrating
