Prior month reports changing after the month ends

As an Accountant, each month I pull all of the monthly sales data and enter into our Accounting Software for reporting. After I've pulled the reports and entered into our software, I notice that some of the entities we have in Toast, their sales amounts are changing. How do I restrict access to prior periods in Toast?

I enter into accounting software daily and reconcile with a monthly report at the end of the month. This is just one thing that drives me batty. Chiming in to support your comment; wish there was a solution to this!
