Spliting a POS Item to different revenue groups

I have an event tonight where I am charging $120 a head.

The breakdown is as follows:

$54.60 for food

$19.94 for wine

$10.55 tax

$14.91 tax

How can I break this all down in a single POS item?

You could create an item called "event" (or a better name) then set the item to tax included and put the price at $120. You could put the food and wine in the item description with this order.
