After counting down a specific drawer and I know my cash deposit will be $XXX.XXX for just that drawer what do I select in the drop down menu : options are Add cash in - Add cash out - Add cash drop....Our employees dont count down the drawers at the end of the night we have the auto close at 4am...the starting cash is already auto set

Could you be more specific on what you want to achieve please? Assuming your staffs forget to count drawer at the end of the day, I would suggest that you adjust the actual deposit on your Toast back-end.

The employees dont count down the drawers at night i do it the next morning, I go to reports-cash loss management -drawer history select yesterdays date-choose a drawer-view-then hit update entries I want to tell it the amount of money I will deposit into the bank for that drawer on that day

In your case, I don't think you need to update your draw balance on your POS terminal.
So your flow is like:
1. start with a preset balance, let's say, $200
2. close out with $300 in drawer (your staffs do not count it)
3. System reset draw balance to $200 at 4 a.m. (drawer still has $300)
4. It's counted next day. You take out the $100 update the cash out amount and actual deposit on Toast back-end . So yeah, you do all the entries on the back-end. There is no need to update anything in house.
