Some reasons I love fast casual restaurants:

  1. They try to do a few things very well
  2. They make creative, craft foods accessible
  3. They use great ingredients while being affordable 
  4. They're very convenient
  5. They have fun and easy vibes

It's one of the funniest ways to operate a restaurant.  It's fast and casual - no suit and tie - just hustle.  We have less than ten steps to win a guest and less time than full service.
