My name is Ginger and I own and run Toucan Taco in Laurel, Maryland.  I think we've had toast for about 5 years now, and it works great for us. We've been here since 1972, still in the same family, so I'd say seasoned veterans!

Our bust season isn't the summer, but rather during the winter holidays. We stock up on supplies and staff, especially on the weekends. 

If anyone has any tips for saving money, I'd love to hear them.

  • What are your best practices for navigating the busy season? Using table management software to set ho many guests can sit every 15 min. It means you are looking at empty seats which is soul crushing but your wait and kitchen staff are never overwhelmed.. it took me several months to get the 15 min seating availability to be perfect for the kitchen and staff to execute flawlessly

Purchase enough gift cards ahead of time so that you can create gift set bundles for Christmas gifts and teacher gifts.  Encourage the team to be prepared and tell them how much you appreciate them. Decorate and provide a fun place for customers to come and hang out.
