  • What are your best practices for navigating the busy season? Hire & train ahead! We have found it's better to have more part-time folks than a few full time so that we are better able to accommodate vacations & call outs. We also plan out our seasonal specials ahead throughout the summer & early fall so that we know what we are ordering & when. Lastly, as a salad concept we are VERY weather dependent so keeping an eye out for those occasional summer rains (we ARE in the Northwest!) so we can adjust labor accordingly is super important for our bottom line.

weather is a key factor for us as well. We have a patio that seats 2X our inside space.... when it rains we seat a fraction of what a lovely day would be

  • Always expect the unexpected. Were on the Sonoma Coast so anything can happen at anytime. Our business is largely dependent on weather and timing for people venturing out to get away from the big cities. Watching labor and having enough staff to handle the surprise volumes can be tricky and must be met with close scrutiny. Above all else take it in stride and have fun!

Arizona’s seasons are in reverse, so summers is when we have to tightened our belts and focus on cost saving measure or increasing revenue with what little costumers stay in town.  We are adding toast retail to help add more sales at checkout for impulse buys.
