Dinner Salad conundrum!

I am currently in the process of building our menu.  We have not gone live with toast yet.  
In our dinner menu, we have entrees that come with a dinner salad (included at the price of the entrée)
We also sell the same dinner salad as an option.

I can't figure out how to create this in my menu.  Our servers typically put the order into our pos, and fire the dinner salad, while holding the entrée.  I want to make sure that stand-alone dinner salads have a price, and that included dinner salads can be fired separately while not incurring a charge.

any suggestions would be very appreciated.

Is the salad a side choice or it just comes with every entree? First you would need courses setup however you like them, then you would setup the side salad as a modifier of say a side choice, and give the salad a course. Then you would need to turn on meal pacing, enable, turn on fire modifier to its configured course, and send courses individually.

Then when you enter the entree and hit send there will be a prompt to send the 1st or 2nd course, any modifiers with the 1st course will be sent to the kitchen and anything with 2nd course will be held.

As far as the charged side salad, you can set that up as a standalone item in a desired menu group, but you can use that existing item when creating the non charged side salad modifier. (I can get more into that if you want but don't want to confuse you will too much information) 

The side salad is a course, but it does not come with every item.  I would prefer to not turn on coursing, I want my serving staff to have control of when they fire entrees.  
It is also possible I don't understand how the coursing works.  Could my servers still choose when courses fire?  Would it cause confusing if a customer ordered an appetizer as an entrée?

Yes they would still have control of what courses are sent, when hitting send there is prompt and you check the courses you want to send. If a customer wants something that is normally an App, the server can change the course to entree and it will go with that course. Unfortunately coursing and meal pacing is the only way I know of to be able to send a modifier without it's menu item.
