We are in the process of building our team as well as our processes and procedures. I wanted to ask - for those of you in high volume where your servers are making great money. How to you process tips? Do you cash out all tips at the end of the night? and if you do - have any of you ever had a negative check because $2.13 and hour didn't cover the taxes, SS etc... Thanks for your input and advice!
