Issue with bartenders and cash management

So we are relatively new to Toast. Our old system had no cash management features. It was very simple and would simply report total cash sales at the end of the shift. Bartenders would count their drawer, back out their opening cash amount, and reconcile it to total cash sales.

We are now using cash management in Toast. We have them entering in their opening cash, but some are forgetting. And some even choose the wrong drawer. No matter how many reminders we send, it continues to happen.

So my question is, what if we don't use cash management at all? Their shift review reports total cash sales. They can subtract their opening cash from their drawer count like they did with the old system, and match that amount to the shift review cash sales number. No one shares drawers, and they only empty the drawer at the end of their shift. 

Is there any downside to doing this? When they close the drawer, I imagine that the close drawer report would simply display the amount of cash in the drawer as the net cash sales after tipping out, without their opening cash. And that's fine because they are used to that.

I know - it's a very easy process and they SHOULD be able to do it without issue, but I done emailing and sticking up reminders around the terminals.

You can set a predefined star balance for the drawers, then you don't have to worry about changing it every day. 

The opening drawer varies. So hoping they’ll change it when it’s NOT the most common amount would probably be worse. 

Ok, so the old way was essentially just starting with 0 balance, so just don't adjust the starting balance at all, start with zero and subtract their starting balance from the drawer, will work the same way as before.
