Payout question

Cash on hand subtracted because it’s assumed it’s being kept towards tips. It’s not. How to change that in back office? All cash is turned in then tips paid out.

The $350 cash in cash sales is being subtracted (assuming they are keeping it toward their tips). How do you handle tips? Are they payed out from cash drawer or payroll?
