So I just started toast yesterday as a server and thought it would be so cool to practice at home to learn the layout.I found on reddit I actually can install an APK on my phone and I logged into my screen and everything. When I put in my employee number though ,it says I need permission. Do you know what permission base this is? What would my manager need to change to give me access? More importantly ,if I do login through this apk at home on the phone, is it just practice mode? It's not clocking me in or ordering stuff is it?

You need the POS access permissions if you don't have them. No it would not be in practice mode, it would clock you in, and orders would be created. A workaround would be to put your phone in airplane mode and practice and nothing would happen but you would need to wipe the app storage before reconnecting to the internet.
