Reporting by item time, not check begin time.

Toast reporting could actually be useful if they reflected when sales were rung in to the system, not simply when the check was begun.  We are a pub often with guest checks being open 4 or more hours with no way of truly knowing how busy the kitchen or bar was for any given hour.

I was told by support "This is the way your business needs the reporting to be".  This is the only point of sale system I've used that reports in this way, or doesn't have a true "time period" report that breaks out true sales / discount activity.
