Currently the closest thing is course firing where you can choose which course to send and hold the rest. There is a server item firing feature coming though https://central.toasttab.com/s/article/Using-Server-Item-Firing you could get something close with the course firing if you made another course called hold or something and then manually change the course of any individual items you didn't want to send to that course and send the rest. All this depends on whether or not you use courses at all.
