Adding a modifier, removing fries, SUBTRACTING $-1 off the entree

Is this possible? if yes, how?

Yeah, just put -1.00 as the price of the modifier.

I did that. But it seems it is automatically adding it to each order. 

Any help on that?

You may have it set as a default modifier? Could you maybe share a screenshot of the modifiers?
