Is there any way to see open invoices on the orders hub? I see some open invoices but not others. However, all open invoices show up on the calendar. 

Is there anyway for leads to show up on the catering and events calendar?

you either have to expand yo uour date range to the entire month or what you want or It may be that they are still tentative and not confirmed

usually some browser cache or cookie issue, try clearing them.
