How can I export "Open Shift" data for a date range (i.e. more than just one specific date at a time) ?

Not sure if you use tip management. If you do you can add tip withholding column by employee to your tip management report. However, if you do not you can use the time entry management report and add the column for tip withholding. This would allow you to see withholding regardless of the shift status
