Are there data sources that correlate demographic info to sales data, from perhaps the cc processing network that Toast can make available to merchants? I know some credit card processors offer this, but I am sure there are some privacy consideration...

I second this. There is much training needed before that particular product, and many like it, serve our concept in a fashion that is easy to use for customers.
