balancing my end of day numbers

Brand new to toast and having  a hard time balancing my end of day numbers.  I need to know which numbers are important when figuring my balance for the day.  and how did the system derive these numbers.  Depending on which numbers i look at ie. shift review, close drawer report, z report or sales summary, i come up with a different answer.  If i take my net sales + my tax amount minus my credit card sales, should equal my total cash.  But system always shows a shortage when i have more cash than it says i should have.  If i take my total cash and add the amount of the overage/shortage it then will equal my actual total.  Can anyone please explain to me why this might be and which figures are relevant to figuring this out?  My expected cash and actual cash numbers NEVER match.  Help!

Is this a full service restaurant with waitstaff operating with cash in hand? Do you tip out at end of shift from cash drawer? There can be many reasons for discrepancies, errors in setup (UI options) and shift review (not requiring cash to be collected/tips paid, or being collected and paid out of wrong drawer. Staff that operate with cash in hand (don't have cashier permission) closing cash sales on a device with a cash drawer attached,  tipping out negative tip situations (house owes waitstaff) from cash drawer without telling the cash drawer.

not a full service restaurant, bartender is  the server. sometimes two on a shift.  girls usually operate on both tils and not to a particular til.  tips are taken out of one cash drawer typically, at end of shift.   system does require cash to be collected/tips paid out before closing shift.  devices only used if sales are paid by card.    Ive spent many hours online in live chat with agents  in accounting trying to get answers to my questions only to end up with more questions.   Thank you for the link Ive already viewed this section but will read through it more slowly and hopefully get the answers im looking  for.

What do you mean by that? Cash sales not rang in at all?
