How have you built out multiple menus in Toast with the same menu items?
We have mulitple menus set up in our back end (Dinner, Lunch, Happy Hour, etc.) where many of the same items are offered in each of those menus. For example, a plate of pasta for lunch could be $20. The same plate is $23 at dinner and at happy hours it's $12. Rather than creating three different items, we add the same menu item to each of those three menus groups and price them differently. It's all good and works well with using the "menu specific pricing" set up.
My question now is building out a takeout menu where again, pricing is different. I also want the Kitchen ticket name to have a slight modification (to be clear to the cooks that they need to prep it for to-go... i get this is redundant bcause it states to go at the top of the ticket) and not offer as many modifers to the customer facing screen/online ordering.
Is it best to create a new item for takeout menus? i.e. TO (TakeOut) Pasta.
I tried to add the existing item but when I altered the kitchen name and removed the inherent modifiers, it also changed it on our dinner menu items too causing an uproar for servers/staff. I'm probably doing something wrong and there's a setting that could fix this.

The pricing part would be the same as what you are doing for your other menus, with menu specific pricing. But in order to have unique modifiers (directly attached to the items) and names you would need to make copies of the menu items and not use existing items, but you would have two completely separate items and multiple items to mark out of stock when necessary. Another possible option (if having takeout specific name is not a deal-breaker) would be to use visibility on modifiers to hide them from online ordering, you just have to be careful, don't hide required or default modifiers or you could cause problems.

Menu specific pricing works .. and the tickets clearly says takeout and has the customers info on the top of the check which doesn’t usually appear on to stay checks … however if you want dish specific you can use one menu and use size based pricing and call one size lunch one dinner and one to go
