Manually fire courses

I was not able to allow waiters to manually fire some courses, as an option. So, if I have this feature, waiters are forced to fire tables to receive payment, which causes a dramatic confusion in the kitchen. 

Is it possible to fire courses as an "option"? Some waiters like to do it verbally and some like to have it registered in the system with time.
