I'm looking for a workaround to get certain items to jump to the top of the KDS screen. Ultimately, I want to send instructions to the kitchen KDS to send certain items to the bar to allow the bartender to stay behind the bar. On certain items, we send the item to a prep station that does not prepare the item, and they are taught to automatically bump the item so that it shows as fulfilled and jumps to the front of the expediter screen. Although our current system works, I'd like to see if there is another system that works without sending items to stations that do not touch the food.

You could also potentially create a course that says "priority" So it can be at the top above appetizers.

Yes, this is the easiest "path":
In Toast Web, navigate to Kitchen > Printers, tickets, & KDS devices > Kitchen. In the Printed Tickets and Ticket Screens section, you'll see the Item Sorting Priority setting with the following options:

I don't think this solves the problem I am addressing. I want an item to go in front of all of the orders on the KDS screen without bumping it from a prep station. For instance, a dessert that the servers or expeditors prepare. We currently have it go to our grill station (although that position has nothing to do with preparing the dessert), and they immediately fulfill the item so that it jumps in front of all of the other orders on the KDS expeditor screen. Is there a way to make certain items, like desserts, jump to the front of the line? I don't think courses will be the answer either. TIA
