I want to have calls answered from home with credit cards and tickets to print at the restaurant 

I'm willing to install any firewall required to maintain PCI compliance.....How can this be accomplished?

You would need to be a self managed network if you are not already. As far as the implementation, I would consult a local IT company for that part of it.
