Is there a way to take screenshots from our Flex displays so I can assemble a manual for employees? I'd like to be able to show specifics for our menus so new users will feel more comfortable. I know I can just photograph the screen itself, but the glare and reflections make the images less engaging.

I think you can take screenshots but I'm not sure there's a quick and easy way to get them off the device.
I take all my screenshots/recordings for training materials using the BlueStacks Android emulator. A brief overview: you install BlueStacks on your Windows PC (or Mac), then install the Toast POS app within the Android instance on BlueStacks. Then you get a mirror image of how Toast would appear on your POS terminal/KDS. It's treated as just another device. Since it's not officially on your Toast network, you should not take orders or use it for any business operations, and you can not take payments with it, but it is perfect for testing your menu layout, POS workflow, and of course, recording/screenshotting training materials.
