Why is the end of night money off from time to time?

So ever since our restaurant has switched to toast the end of night safe count is usually off. Before we switched it was never under five dollars or over five dollars. But since we switched its been very random. One day itll be -87.68 the next day itll be over +157 and the next day itll be normal -2.58 for example. Does anyone else experience this? Has anyone resolved this issue?

Only when waitstaff make mistakes, make sure any staff that are working with cash in hand know to never close out a cash sale on any device that has a cash drawer attached. Also anyone who is working with a cash drawer should be clocked in with a job that has cashier permission checked, and the cash drawers set to open on cash payment. The accepted answer isn't always true. We had problems at one time with our wifi connection to handheld devices. Our ToastGo2's lost connection and destroyed the server's shift, saying that the shift wasn't closed and the cash wasn't collected. Going back the next day you can see that the entire clock-in was removed and a handheld forced them to clock in. This confuses the system and causes other issues. Just one more thing to check for.
