We just started using Toast. When a customer orders for a later date (Paid in Total), Net sales is Total Sales Amount minus (Tax plus Gratuity plus Tips plus Deferred Amounts) but does not include "Paid in Total (pre-orders)", per Reporting-Analytics- Guide.pdf. Question, but is the "Paid In Total tax "and "Paid in Total tips" excluded or included the amounts of Tax and Tips?
Net Sales $5,424.95, Tax $506.39, Tips $709.09, Paid in Total $373.31 (Net $320.99, Tax $32.32, Tip $20.00, total $373.31)
Is the Paid in Total Tax $32.32 and tip $20.00 excluded or included in Tax Amount $506.39 and Tips $709.09?

They should be included as in your example. You can verify it by scroll further down on your "Summary Sales" page. There is a box where it lists out all the taxes (depending on your configuration) and also a box for all payment types. The sum of the taxes and tips should equal to your tax amount and tips of the day.
However the "net sales for paid in total" in not included as part of the $5424.95 sales. It should be included in the net sales of the day when the scheduled order is created.
So you can probably see it this way:
Net sales = all orders created on the day, paid or not paid excluding voids
Tax amount & Tips = taxes and tips from orders which are paid on the day.
