Butcher case meat pricing

Hi - I have a retail section of the restaurant which includes a butcher case.  The prices of the meats in the case are subject to different pricing.  What would others recommend for how to price this?  Open Price?  If I did that, then I would need to ask servers to use calculators to price out the item by weight and price.  Any thoughts?
