Catering and events question

Hello I was wondering if I got the catering and events package would I be able to control how the gigs come in? The reason I ask is because it takes 3 days for me to marinate and smoke my meats and I want to know if I can set a limit of time in advance for each catering gig or event so I am not over whelmed . Hope this makes sense

 A little late, but yes. This is the reason we added the Catering module for our business. We custom bake breads each morning, so we can't take online orders for same day fulfillment. The Catering module allows you to set minimum lead times for products or menus to suit your production capacity.
