We have started accepting holiday orders online allowing customers to schedule ahead to a later date for pick up. When I close out for the day should I be closing these credit card transactions on the day the order was placed or when it is picked up?

Hey @BigDipper, I believe the order can be closed once the food is picked up. Provided it was paid for before that, it will show as "Paid in Total" on the sales summary. The articles listed below provide more information!
