We have a bakery where all items up front are made the night before to be put in our display cases. We also have online orderings for specialty items (cakes, mostly) as well as wholesale. Right now my KDS is set up to be the only screen that receives the online catering orders. We get a lot of orders that are scheduled days in advance. Our chef wants to see them immediately. Because of this, the orders are red all the time, meaning "past due/due". For a lot of the orders our team will make the cakes right away and then freeze them until the day of pickup and they glaze/frost it then. The problem is, our team doesn't want to "fulfill" the order until the customer has picked up the cake but then they have a hard time keeping track of what cakes they've made to be frozen already and what ones they haven't. My question is: Is there a way to have another option before it's fulfilled without having an additional screen? If I were to have to get an additional screen, could I not use an actual Toast device but rather a monitor?

Toast has an instant access Test Kitchen release for something called KDS Start Queue, which splits a KDS Prep screen in half, with items first going to the "Unstarted" side and then once cleared from that side, they move to the "In Progress" side. I think this is Toast's answer to the age-old question: "How do I know which of these items I've dropped and which still need to be dropped, without adding a second screen?". It's a test kitchen feature that I haven't worked with, but it could be what you need. A big issue I see with it is is screen real estate, which would basically be cut in half, but I'm curious if it's something that would work for you...
