How can I obtain access to our TOAST POS from my laptop remotely?

You can use an emulator, but which emulator depends on what you have for a laptop, if you can share that I can point you in the right direction.

You can use bluestacks for Windows, but they don't support latest mac version anymore. Check out this previous post for an option for mac.
