Hourly Sales Capture

When does toast capture the hourly sales? When the check is created, or when the check is cashed out, or when the item is added to the check?

Reason I ask is that frequently, our hourly sales numbers adjust up significantly, or don't represent the actual sales in an hourly period. For example, We check sales at 5:10 pm for the 4:00 hour and it says X.  Later that evening, say 8 pm, we check again and the 4:00 hourly sales has jumped to Y.

Or, as in yesterday, we showed $5.86 sales in the 8 pm hour despite having a full bar.  Yes, all the guest checks were opened in the 7 pm hour while the entertainment was in action. About half closed out in the 8 pm hour and the remaining half closed out in the 9 pm hour.

What gives?

(all the FAQ and videos are so basic, they don't give any hint as to how and why toast does some things)

Hi! Hourly sales data is recorded when items are rang in.

For example: Check #1 was started at 5:55pm and had a total of $20 on it, that $20 is tracked for the 5:00pm hour. If they order dinner at 6:10, making the check $90, the $70 in items rang in after 6:00pm count towards the 6pm hour. 

If you're feeling super compelled to track this a bit further... look at the ticket details report. You can see what time every item was rang in to each prep station. It can be broken down by the hour, fulfillment time, and each item rang in at what table, time, fire date, etc.
