We run a unique operation where tabs are typically started before the guest is seated at a table. While using the Toast Go 2, we do not have the option to transfer the check to a table. You can complete this task on the terminal. Is there a setting we are missing or is it not possible to transfer checks to a table while on the handheld?

It may be related to the employee permissions; I would check that the employee transferring the check to a table has the correct permissions.
To be able to transfer checks and orders, you must have both an access mode permission and a specific permission to transfer multiple orders or a single order.
Restaurant employees can also be granted permission to manage orders that are assigned to other employees.

I would also check that the handheld is up to date and that you are not having any connectivity issues on your handheld. 🙂
